Bleu d’Auvergne pancakes

Bleu d’Auvergne pancakes


  • 3 to 4 bourriols (Auvergne-style pancakes)
  • 150 g Bleu d’Auvergne
  • 1 pot of thick crème fraiche


Using a fork, mash the Bleu d’Auvergne and crème fraiche to get a uniform, creamy paste. Spread generously over each bourriol. Roll tightly. Wrap in cling film and chill for around 1 hour. Slice into 3 cm pieces and secure using a cocktail stick.
