Filo pastry triangles with Bleu d’Auvergne, pears and honey

Ingredients

  • 8 generous slices of Bleu d’Auvergne
  • 2 conference pears
  • 4 sheets of filo pastry
  • Whole walnuts
  • Honey

Preparation

  1. Make one filo pastry triangle per person.
  2. Decore the pears.
  3. Cut the Bleu d’Auvergne into 1 cm slices.
  4. Roast the whole walnuts under a grill and crush.
  5. Place one slice of Bleu d’Auvergne on each sheet of filo pastry between 2 slices of pear.
  6. Add a pinch of walnut then pour over one tablespoon of honey. Fold the filo pastry into a triangle.
  7. Baste with melted butter using a brush. Bake for 20 mins at 180° C.
  8. Remove from the oven and glaze with a little honey.
  9. Eat while hot and crisp.
