The producers

Every day, thousands of men and women take part in making Bleu d’Auvergne PDO cheese.

Every day, 1,450 dairy farmers provide the raw material needed by 11 operators, 6 cheese dairies and 5 farm producers to produce Bleu d’Auvergne PDO.

PDO means product specifications and the Defence and Management Organisation (ODG).

Established in 1972, SIRBA, Regional Inter-professional Bleu d’Auvergne Syndicate (an independent association under the law of 1901) is the Defence and Management Organisation that represents Bleu d’Auvergne PDO professionals at the INAO (National Institute of Designations of Origin) and within Europe. It is in charge of both designing and monitoring compliance with the Bleu d’Auvergne PDO product specifications, as well as providing any technical assistance required by producers and protecting and promoting the Bleu d’Auvergne PDO brand.

The Bleu d’Auvergne PDO is made up of three academies, each represented on the management board by four delegates elected on a four-year term.
On the one hand, these three academies include dairy and cheese farmers, and on the other hand, private collectors, processors and refiners. Finally, they also include cooperative collectors, processors and refiners.
The three academies must reach unanimous decisions – bringing true meaning to the word collective!
